Southern Hot and Spicy Pork (คั่วกลิ้ง)

My favorite menu for the southern of Thailand is indeed Kua Gling! This actuall has no English name but it can be describe as Pork Stir-fried Hot and Spicy Paste or you can call it Kua-Gling(คั่วกลิ้ง).

Southern people always love a curry style menus. And because most of their menus are very spicy. So that’s why the main ingredient of their chilli paste is turmeric which i lately understand that is help protecting your stomach from eating too spicy foods. But this menu i adjusted the level of spicy to be my version which is not very spicy but still spicy a bit. I actually could not find a southern curry paste near by. The Grocery store doesn’t have it, and i have no time for market shopping. So I decided to just use a red curry paste and add a little bit of turmeric in there to make it more southern. Anyway, i think even you do not have a turmeric at all you still can make this dish.

The concept of this menu is not that complicate. Just stir-fry your ground pork or chicken with the curry paste until they are dry then add Kaffir Lime Leaf, Fresh Pepper, Lemon Grass then stir-fry. Serve with rice and add boiled egg would make the combination.

Tips: To boil a perfect egg york: Water boil at 100C and after that put an egg into the boiled water for 8 minutes. Then leave it in a cold water for a while. You will get a perfect boil egg york as in the picture.

Dried Chilies/Lemon Glass/Galangal/Bergamot/ Garlic/Pepper/Coriander Root/Shallot/Shrimp Paste/Fresh Turmeric/ Salt

Ingredients For The Southern Hot and Spicy Pork

  • 300 g Ground pork
  • 3 tbs Chile paste
  • 3 – 5 Kaffir lime leaf, choped
  • 3 tbs sugar
  • 5 Fresh Pepper
  • 3 – 5 tbs Turmeric
